DEARBORN — The Henry Ford College Culinary Arts Department will hold its Chef’s Certification Dinner at 6 p.m. April 20 at Fifty-One O One – HFC’s student-run restaurant in the Student & Culinary Arts Center on the main campus.
The proceeds from this event will benefit student scholarships.
HFC Culinary Arts Lead Instructor/ACF Program Coordinator Eric Gackenbach will honor fellow HFC colleague Chef Kris Jablonski, the Chef de Patissier, who recently became a certified executive pastry chef through the American Culinary Federation.
Jablonski earned an associate’s degree in Applied Science/Culinary Arts in 1987 from Schoolcraft College in Livonia and his bachelor’s degree in Hotel and Restaurant Management in 2013 from Siena Heights University in Adrian. Additionally, he has been a certified hospitality educator since 2014. Jablonski has been teaching at HFC since 2009.
“It is an honor to carry the title of certified executive pastry chef as it is a mark of knowledge and professionalism in the industry, and sets yourself up as an example to others that they can achieve it also,” Jablonski said.
Some of the artfully presented ingredients and flavors during this dinner include: coconut cream soup, frisée salad, butter-poached lobster, intermezzo, roasted beef tenderloin, braised short ribs, King Trumpet mushrooms, confit potatoes and pistachio crumble.
There will be an assortment of house-made breads and hors d’oeuvres, including vegetarian and traditional canapés. Rhubarb threads, strawberry ice cream, chocolates and pate de fruit will be served for dessert.
Coffee and tea service included. Beer and wine will be available for purchase for people age 21 or older with a valid photo identification.
The cost to attend this dinner is $45 per person, $30 of which is a tax deductible donation to the HFC Hospitality Facilities Fund. For reservations, send checks or bring cash to the HFC Foundation Office, Room 420 of the Welcome Center at 5101 Evergreen Road, Dearborn, MI, 48128-1495. Tickets will not be issued for this event. There will be a list of attendees at the door the night of the event. Letters of recognition will serve as documentation of donations.
